Low Carb Keto Popcorn Recipe (Just One Ingredient)

Using dried cheddar cheese cubes instead of corn kernels, this recipe will hit the spot!

It is salty, packed with fats and flavor, and, most importantly, low-carb keto-friendly!

This Low Carb Keto popcorn uses just one ingredient, and it is highly customizable.

Cut one block of cheddar cheese into irregular cheese cubes and allow to dry out at room temperature for at least 24h.

By drying out the cheese at room temperature, we create the conditions for the cheese to puff up when baked in the oven to resemble the popcorn texture.

Once the cheese cubes are dried out, bake at 200 C/390 F for 3-5 minutes or until they slightly melt and puff.

Remove the cheese from the hot oven and allow it to cool down for 10 minutes before serving.

The snack is packed with fats independently, but if you want to add even more flavor, melt some butter or drizzle some olive oil before serving. Also, feel free to add any herbs and spices or enjoy it as it is!

You can store this Low Carb Keto popcorn recipe in an air-tight container for up to 4 days on the kitchen counter or up to 1 week in the fridge.

This recipe is freezer friendly, too, so make a double or triple batch ahead and freeze for up to 6 months.

Cut the block of cheese into small, irregular cubes.

Place on a baking tray lined with parchment paper.

Cover with a clean kitchen towel and allow to dry out at room temperature for 24h.

When dried out, preheat oven to 200 C/390 F, fan on.
