Easy Vegetarian One Skillet Mexican Rice ( Healthy!)

Here is a rice that changes the usual Asian rice . The textures are really wonderful: on one side we have the crunchy corn, and on the other the creamy red beans. I suggest this veggie recipe to anyone who loves tex-mex!

Easy Vegetarian One Skillet Mexican Rice ( Healthy!)
Instructions
  1. Prepare 1 cup of rice with 1ยฝ cups of water or as directed on the package.
  2. In a large saucepan, heat the oil over medium heat. Brown the onion with the hot pepper for about 2 minutes. Add pepper and spices, mix and continue cooking for 2 minutes.
  3. Add the salsa and mix well. Add the rice and mix until the ingredients are well combined.
  4. Add the corn grain,red beans, and green onions, and mix again.
  5. Correct the seasoning as needed.
  6. Garnish with coriander
