- 1 cup of basmati rice or other rice of your choice
- 1 cups ยฝof water or as directed on the package of the rice .
- 2 tablespoon tbsp.of olive oil
- 1 small diced red onion
- 1 jalapenos finely chopped
- 1 yellow pepper cut into cubes
- 1 tsp. of chili powder
- 1 tsp. cumin
- 2 tsp. paprika
- 2 tsp. oregano
- 1/2 cup salsa
- 1 cup frozen corn
- 1 can of red beans rinsed and drained, 540 ml
- 4 green onions minced
- cup ยผcoriander
Ingredients

- Prepare 1 cup of rice with 1ยฝ cups of water or as directed on the package.
- In a large saucepan, heat the oil over medium heat. Brown the onion with the hot pepper for about 2 minutes. Add pepper and spices, mix and continue cooking for 2 minutes.
- Add the salsa and mix well. Add the rice and mix until the ingredients are well combined.
- Add the corn grain,red beans, and green onions, and mix again.
- Correct the seasoning as needed.
- Garnish with coriander
