  • 6 string cheese cut in half
  • 1/2 cup almond flour
  • 2 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp onion powder
  • 1 egg
  • 1/2 cup pork rind panko crumbs
  • 1/4 cup parmesan
  • 1 tsp Italian seasoning


  • Prepare three containers;
  • To one container add the almond flour with garlic powder, onion powder, and salt and mix well;
  • To another container add the egg and lightly beat it;
  • To the third bowl, add the pork rind panko crumbs, Italian seasoning, and parmesan cheese;
  • slice the string cheese in half;
  • To prepare the mozzarella sticks, roll the cheese in the almond flour mix, then the egg, and finally in the pork rind panko crumbs; repeat until all the cheese strings are coated;
  • Place the breaded cheese sticks onto a tray and freeze for at least 2h.
  • When ready to cook, add 2-3 frozen mozzarella sticks in a small pan with enough hot oil in it to deep fry the cheese; cook for 4-5 minutes or until golden brown; alternatively, they can be baked or air fried at 400 F for 5-7 minutes;
  • Remove on a wire rack and allow to drain excess fat.
