Prepare three containers;
To one container add the almond flour with garlic powder, onion powder, and salt and mix well;
To another container add the egg and lightly beat it;
To the third bowl, add the pork rind panko crumbs, Italian seasoning, and parmesan cheese;
slice the string cheese in half;
To prepare the mozzarella sticks, roll the cheese in the almond flour mix, then the egg, and finally in the pork rind panko crumbs; repeat until all the cheese strings are coated;
Place the breaded cheese sticks onto a tray and freeze for at least 2h.
When ready to cook, add 2-3 frozen mozzarella sticks in a small pan with enough hot oil in it to deep fry the cheese; cook for 4-5 minutes or until golden brown; alternatively, they can be baked or air fried at 400 F for 5-7 minutes;
Remove on a wire rack and allow to drain excess fat.
