  • An Oven

  • 2 lbs. pork belly bone-in
  • 3-4 tbsp vegetable oil
  • 1 tbsp flaked sea salt
  • 1 tbsp freshly cracked black pepper


  • Preheat oven to 482 F/250C;
  • Using a sharp knife, score the skin of the pork belly without cutting into the meat;
  • Use a pastry brush to brush the vegetable oil over the top of the pork;
  • Sprinkle with salt and black pepper;
  • Place in an oven-safe dish and bake at 482 F/250C for 15 minutes; reduce the heat to 350F/180 C and cook for another hour.
